Dom Pérignon has a minimalist winemaking philosophy. Any artificial intervention is dispensed with. The arch enemy is called oxidation. The assemblage is the basis of the Dom Pérignon style. It is subject to timeless principles. A slow, long aging of the wine on the lees is the price Dom Pérignon pays to produce an incomparable champagne and one of the most complex wines ever.
The 2013 wine year was a welcome throwback to the glorious past of vintages with late harvests.
After a cold and wet winter, spring turned out to be gray, quite cool and extremely rainy. The budding of the vines began about two weeks later than the ten-year average and this delay continued until harvest. The hot and dry summer brought more sunshine than at any time since records began in Champagne. This had a particularly positive effect on the quality of the grapes. The rain of early September quickly gave way to winds coming from the east, which ensured that the grapes remained healthy until harvest. The grape harvest at Dom Pérignon lasted from September 28 to October 15. Tasting the fruit revealed a promising balance between acidity and fullness.
